Global product attributes can be used to create attribute templates for products or to assign attributes to products globally.
Global attributes are only set for products as attributes, if they are assigned to products. You can either assign global product attributes globally to products or at the attribute tab at the product details page.
Therefore global product attributes function as templates, that can be assigned to products without the need to create each attribute from scratch for each product.

Several other types, though supported at product level, are currently not available globally but only through the product details page.
Additional functions are also only available at product level, like assigning images to options, etc.
